Château Picoron Tattarrattat is an unconventional, zero-sulphite, naturally fizzy red wine that completely breaks the traditional Bordeaux winemaking rules. Fermented using carbonic maceration—a whole-bunch fermentation technique famously used in Beaujolais—this is 100% Merlot served as a bright, juicy, and beautifully fresh chillable red.

Tasting Notes & Style

Grown on the clay-limestone "Terrasses Bas" single plot, this natural red offers a vibrant, juicy, and energetic taste profile:

  • The Nose: Bursting with aromas of fresh kirsch, wild strawberries, plums, and a distinct touch of crunchy red apple.

  • The Palate: Incredibly juicy, smooth, and low in tannins. It is alive with a subtle, playful natural fizz from the carbonic maceration, carrying bright flavours of sour cherry and tart red fruits.

  • The Finish: Refreshing, lively, and highly acidic with a beautifully clean, slightly funky finish.

Pro Tip: While it benefits from a quick decant, this wine is absolutely at its best served lightly chilled for maximum fruit expression and freshness.

Best For & Gifting Occasions

  • Ideal Alternative to: Beaujolais Nouveau, light chilled Pinot Noirs, or juicy natural Valpolicella.

  • Perfect Gift For: Natural wine lovers, fans of "glou-glou" (refreshing, highly drinkable reds), or anyone eager to try a totally unique side of Bordeaux.

  • Dietary & Sustainability: No added sulphites, 100% Vegan, organic farming principles, and minimal-intervention.

Food Pairing Guide

Because of its bright acidity and low tannins, Tattarrattat is incredibly food-friendly:

  • Casual Eats: Veggie burgers, thin-crust woodfired pizzas, or gourmet hot dogs.

  • Rich Classics: Beef Bourguignon, grilled poultry, or roasted root vegetables.

  • Charcuterie: Platter of cured meats, pickles, sourdough bread, and hard cheeses.
