St Hilary Vineyard Sparkling White Wine | Traditional Method Brut
Experience a magnificent expression of modern Welsh viticulture with the debut sparkling vintage from St Hilary Vineyard. Located just a mile outside Cowbridge in the heart of the Vale of Glamorgan, this premium Welsh sparkling wine is a classic, hand-harvested blend of Chardonnay, Pinot Noir, and Pinot Meunier grapes grown using low-intervention, regenerative farming principles.
This sparkling wine is 100% vegan-friendly and vegetarian-friendly, produced using natural low-intervention winemaking practices with no animal-derived fining agents.
Tasting Notes & Style
Made using the time-honoured traditional method and aged for 12 months on the lees, this bright and inviting Brut offers delicate streams of fine bubbles. The nose opens with aromas of crisp green apple, fresh lemon, and warm brioche. On the palate, zesty citrus and orchard fruits are carried by a soft, cloud-like mousse, layered with complex notes of toasted biscuit and rich brioche, finishing with a lively, elegant freshness.
